Cooking out of my garden

As Summer comes to an end.  I am taking the time to create meals from veggies from my garden.  Fresh squash, onions, garlic, parsley and tomatoes freshly picked then pan fried in chicken fat with dried crawfish, ginger, sunflower seeds and a splash of hot sauce.   Served on a bed of fresh sliced tomatoes.  I  love being able to go into my backyard garden and create meals for my mother and myself.  Everything I serve my mother food from my garden she smiles.  This makes me know that I have made her happy giving her meals she love to eat.  It reminds of when I would come home from college during the Summer.  My mother would come home for lunch and I would prepare a plate for her.  I loved to really dress them up.  When Mom would walk into the kitchen and saw her lunch, the first thing she would do was to get her camera and take pictures.  I would ask her, "What are you doing?  You have to eat before your lunch break is over!"  Mom would tell me, "I have to take a picture before I eat!  It is so pretty!  Your Grandmother would be so proud of you!"  Then Mom would give me a big hug then eat her lunch and thank me.  She would do this all Summer long until it was time for me to go back to school.  I think that is why I like to cook for my mother, my family and my friends.  I love to see them smile.

Earlier in the day my neighbor gave me some plantains that she would not have time to use.  They were very ripe.  So I pan fried them in the skillet and Mom and I had them with our lunch.  Boy did Mom smile really big!  Then she said, "This is good!"  That is when I knew I did a something right today.  Made me feel great that I out that smile on my mother's face today!
